Snow Day RAK Louisville Challenge

Wow. An unexpected snow day! I don’t know about you but I love snow days.
In between making plans with friends and catching up on school work, how about making some breakfast burritos for the Louisville Burrito Riders.
The recipe is simple and making 1 batch of burritos will be a great way to get the family, friends and neighbors involved. Not much cooking – just scrambling eggs and warming up the beans. Otherwise, all you are doing is assembling.

Most of you know about the Burrito Riders – they ride their bikes every 2nd and 4th Saturday of the month, deliver breakfast burritos to anyone who is hungry and build relationships over a period of time.
You can message them on Facebook or via email and they will pick up or you can drop off. Or, you can message us and we will pick it up. You can make them pretty much anytime and just freeze them.

This has to be the easiest way to serve!

Here is the recipe:
• 2 packages large (at least 10″) flour tortillas
• 1 dozen eggs
• 3 cans of black beans (15 oz)
• 20oz of mild salsa
• 12oz shredded cheddar cheese
• 4 cups cooked rice
• Aluminum foil to wrap the burritos
• 2 tsp cumin
• 2 tsp garlic powder

1. Warm the black beans over medium heat. Add the cumin and garlic. Drain the excess liquid.
2. Scramble the eggs. Salt and Pepper to taste
3. Prepare the rice according to package directions
4. Combine rice, beans, salsa and eggs in a large contained. Stir it in gently until it is all mixed.

1. On a large tortilla, place 1 cup mixture in the middle. Fold each end and roll the burrito to close.
2. Wrap the burrito with aluminum foil.

Today in Louisville, everyone is talking about how cold it is going to get. Most people are talking about maybe there will be no school and there will be ice.

Our friend, Miss Carla, took the opportunity to do a great and thoughtful RAK. She went out and bought coats to give to people who don’t have a warm coat. How cool is that? She bought coats and then, took them to Wayside Christian Mission. They will be working hard to meet the needs of people who need help when the weather gets really cold.

I think that this is a great RAK in helping our city.

This is something really easy to do to start someone’s day. They will surely have a great day if someone surprised them first thing in the morning! With Breakfast. Donuts!!!!

We went to Heitzman’s Bakery and got a dozen beautiful looking glazed donuts. (You can go anywhere. We went to Heitzman’s because it was close).

I took it back home and put a bow on it and then slowly walked it over to a neighbor’s house. We don’t know them very well but they have kids and they always seem friendly. I went over there and rang the doorbell. Their dog started to bark and I quickly ran away so they did not see me. I had to hide behind the big tree in our yard as they came out to look.

It was really exciting. I hope that they got the treats and had them for breakfast!!

So, my mom and I were shopping for mechanical pencils in Walmart. I wanted to tell my friends about the RAK Louisville project and then give them a mechanical pencil to kick it off in my class.

This man (who was shopping for folders in the same aisle), comes up to us and hands me $5 – and tells me, “I really like that idea. Here is some money to help pay for the pencils”. And then he walks away. I was really shocked. He must have overheard me talking to my mom or Dad. I told him Thank You so many times! Wow.
